β-Conglycinin is a trimeric glycoprotein (7S) consisting of three types of subunits, α' (57-72 kDa), α (57-68 kDa) and β (45-52 kDa) in different combinations. As for other 7S globulins, the subunits are associated via hydrophobic and hydrogen bonded interactions without the contribution of disulphide bonds.
